Spumoni Ice Cream

Spumoni

4 egg yolks

2 tablespoons cold water

1/4 cup sugar

1/2 cup Marsala

1/4 cup diced mixed candied fruit

1 cup heavy cream, whipped

chocolate ice cream

Beat yolks well. Add the water, then sugar, the wine and beat well.

Place mixture in double boiler over hot water and cook over low heat, beat the entire time until mixture thickens.

Remove from heat and cool. When cool, stir in candied fruits and fold in the cream. Pour into a tray.

Make chocolate ice cream. When cool, spoon it over the first layer in the tray and freeze overnight.

Chocolate Ice Cream

1/4 cup sugar

pinch of salt

1 egg

1 teaspoon flour

1/2 cup scalded milk

1 oz. unsweetened chocolate

1 cup heavy cream, whipped

Mix sugar, salt, egg and flour together. Slowly add hot milk and stir well.

Melt chocolate over hot water, add to mixture and stir well.

Cool the mixture. When cool, fold in whipped cream.
