Layered Ham Sandwich

2 tablespoons cooking oil

1 1/2 cups dried tart red cherries

3/4 cup chopped red onion

3/4 cup red wine vinegar

5 cups finely shredded green cabbage

1/2 – 3/4 cup light salad dressing or mayonnaise

1, 12 inch loaf Italian flatbread (Focaccia)

1 pound thinly sliced, smoked ham, turkey, and/or turkey ham

Use a medium frying pan and heat the oil.

Saute the cherries and onion for 5 minutes, until just softened.
Stir in the vinegar and set aside.

Use a medium bowl to combine the cabbage and salad dressing. Cover and set aside.

Carefully split the bread horizontally.

Spoon the cherry relish on the bottom slice.

Place the cabbage mixture on top of that.

Layer the meat on top of the cabbage.

Place the top half of the bread on and cut into wedges to serve.

Makes 8 servings.
