Mozzarella and Roasted Pepper Sandwiches
8 oz. package sliced mozzarella cheese
8 2 inch pieces of Italian bread
1 C. fresh basil leaves
1 large red pepper roasted and quartered
6 pitted Greek black olives
1 T. fresh lemon juice
1/4 C. olive oil
1 garlic clove slivered
1/8 t. cayenne pepper
Place olives, garlic, lemon juice and cayenne pepper in a blender. Blend until smooth.
Cover 1 side of the bread with the olive dressing. Layer the roasted pepper, cheese and basil leaves on top of the olive dressing. Cover the sandwiches with the top halves and cut in half.
Sandwiches may be put under the broiler for several minutes to heat cheese if desired.
Serve immediately.
