Pita Crisps with Spinach, Red Pepper and Feta
4 whole-wheat pita rounds
2 large cloves garlic, cut in half
4 C. fresh spinach leaves
1/2 C. roasted red pepper strips
6 T. crumbled feta cheese
Split the pita rounds in half crosswise. Toast under a conventional broiler or in a toaster. Rub each toasted pita half with garlic. Set aside.
Place the spinach in a casserole dish. Microwave at high power until the leaves begin to wilt, about 1-2 minutes.
Arrange the toasted pita halves on a serving platter. Top them evenly with the spinach, red pepper strips and feta cheese. Microwave at high power until the cheese begins to melt, about 1 1/2 to 2 minutes, rotating the platter once.
