Layered Cracker Dip

Layered Cracker Dip

Bottom Layer:

8 oz. package light cream cheese, softened

5 oz. can minced ham

1 t. minced dried onion

1 t. lemon pepper

Using an electric mixer or food processor, mix all ingredients. Line a flat, 4-inch round bowl with plastic wrap and press mixture into it or hand form a 1-inch circular layer on a plate covered with plastic wrap. Seal tightly and refrigerate at least 4 hours or overnight.

Top Layer:

8 oz. package light cream cheese, softened

1-1/2 C. shredded sharp

2 green onions including the pale green tops, minced

1 T. milk

Follow the same directions as for the bottom layer. Use fresh parsley as a garnish.

To serve, carefully turn out bottom layer on serving plate. Smooth the sides with a knife. Place parsley sprigs around the edges, far enough over the edge to show when top layer is applied. Apply top layer and smooth edges and top. Garnish top with parsley sprigs. Serve with crackers.

Servings: Makes 2 cups.
