Margarita Wings

Margarita Wings

2 tablespoons vegetable oil
20 trimmed and separated wings
1/4 cup tequila
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
Dash hot sauce
2/3 cup bottled margarita mix
1 teaspoon grated horseradish
2 tablespoons (1/4 stick) unsalted butter
Juice of 1/2 lime

In a large, heavy skillet, heat the oil over a high flame. Add the wings and fry for 5 to 8 minutes, or until crispy brown. Carefully add the tequila. Ignite, if you wish, or let simmer for 5 minutes, until the alcohol has burned off. Sprinkle the salt, pepper and onion powder over wings.

Stir to seal in their flavor. Add the hot sauce and let it blend in for 2 minutes. Add the margarita mix, horseradish, butter and lime juice. Reduce the heat and let the wings slowly simmer for 5 minutes, or until the sauce.

Sticks to them like a glaze. Transfer to a platter, garnish with fresh lime slices.
