Cold Brisket of Beef Sandwiches

5 lbs. beef brisket

1-1/2 tsp salt

2 Tbsp Worcestershire sauce

1 Tbsp honey

1/4 tsp ground cinnamon

2 Tbsp Tamari (natural soy sauce)

1 bay leaf

1 large onion, peeled and cut

1/2 cup dry red wine

1/2 cup water

— Sour Cream Horseradish Sauce —

1/2 cup sour cream

2 Tbsp horseradish

1 Tbsp chopped parsley

1 tsp grated onion

1/2 tsp lemon juice

Salt to taste

10 onion buns or hard rolls, split

Trim excess fat from brisket and rub salt on meat. Place in heavy-duty foil.

Combine Worcestershire sauce, honey, cinnamon and Tamari. Brush over meat. Add bay leaf, onion, wine and water to meat. Wrap and seal in foil. Bake at 350 degrees for 3 to 4 hours. Cool.

Combine sauce ingredients and spread on buns or rolls. Fill with cold brisket. Wrap and take to picnic site.

Makes 10 sandwiches.
