Blue Cheese Coleslaw
1 1/2 lbs. green cabbage, shredded
2 carrots, peeled and shredded
1/4 C. sweet onion, finely chopped
1/3 C. cider vinegar
3 T. sugar
1/3 C. good quality mayonnaise
1/3 C. sour cream
1/3 C. crumbled bleu cheese
Salt and pepper to taste
Combine cabbage, carrots and onion. Heat cider vinegar and sugar to boil. Toss with vegetables and let sit 15 minutes.
Drain the vegetables well and combine with remaining ingredients. Prepare at least 2 hours ahead or overnight so flavors can mingle.
