Greek Peasant Salad
1 tomato
1/2 cucumber in chunks
3 slices onions, cut rings in half
2 oz. feta cheese in cubes
about a dozen Kalamata olives or ripe olives (optional)
1/4 C. olive oil
1/4 C. lemon juice
1/2 t. oregano
salt and pepper to taste
1/4 t. sugar
Put in a jar and shake well, dress salad, cover with saran and let sit on the counter for about an hour.
