Strawberry Glace’ Pie
1 recipe baked pastry shell
8 cups medium strawberries
2/3 cup sugar
2 T. cornstarch
several drops of red coloring
whipped cream
Remove stems from strawberries, cut lg. berries in half – set aside.
Glaze: In a blender combine 1 cup strawberries and 2/3 cup water. Blend until smooth. Add enough water to mixture to equal 1 1/2 cups. In a medium saucepan combine sugar & cornstarch, stir in berry mixture. Cook and stir until mixture thickens, stir in food coloring. Cool for 10 minutes without stirring.
Spread about 1/2 cup of glaze over bottom and sides of pastry shell. Arrange berries in pie pan. Carefully spoon half of the glaze over fruit. Add more berries and remaining glaze.
Chill 2 hours. Garnish with whipped cream.
Serves 8
