Low Fat Pasta-Waldorf Salad
Dressing:
3/4 C. low fat, vanilla flavored yogurt
2 t. honey mustard
1 tsp. grated lemon zest
1/2 t. salt
1/8 t. black pepper
4 C. cooked rotini pasta (about 2 C. dry)
3 C. chopped, unpeeled Red Delicious apples
1 C. diced celery
1/3 C. toasted, chopped walnuts
1/4 C. minced red onions
2 T. chopped, fresh parsley
Combine yogurt, honey mustard, lemon zest, salt, and black pepper in a small bowl. Refrigerate until ready to use.
Toss remaining ingredients in a large bowl. Add dressing and mix well.
Chill for 1 hour before serving.
