Marsala Vinaigrette

Marsala Vinaigrette

1/3 C. Marsala wine (some alcohol burned off)

1 T. minced garlic

1 T. minced shallots

3 T. fresh chives, chopped fine

3 T. fresh thyme, chopped fine

juice of half an orange

1 1/2 T. Dijon mustard

1 C. olive oil

1 C. vegetable oil

1 C. rice wine vinegar

1/4 C. red wine vinegar

Mix all ingredients except oils and chives in blender. Slowly drizzle in oil with blender running. Fold in fresh chives and salt to taste.

Yield: 1 quart.
