Pea Salad Recipe
This is one of those salads that you can put together in a matter of minutes. I love this salad because I love the crunch of the peas with the creamy pickle dressing and bites of cheese too!
I first had this salad years ago in Germany when a friend brought it to a dinner we were having. I fell in love with it immediately. She added peanuts to it right before she served it only I didn’t have any so I did the naked version, I use frozen peas for this because I like the crunch of the peas. I don’t let them thaw before mixing the pea salad up either. I just dump it together and let it set for at least 2 hours.
Pea Salad is made with creamy pickle dressing with peas, celery, onions, cheddar cheese and peanuts if desired.
Ingredients
- 1 lb. frozen peas
- 1 cup celery - chopped
- 1/2 cup chopped onion
- 1/2 cup mayonnaise
- 1 tablespoon sugar
- 1/4 cup bread and butter pickles - chopped
- 2 tablespoons relish
- 6 oz. cheese cubes
- 1 cup peanuts - optional
- salt and pepper to taste
Instructions
- Chop the bread and butter pickles. Add to a small bowl. Add the mayonnaise, relish, salt and pepper. Stir together. Set aside.
- Add the peas (frozen) to a large bowl. Add the chopped celery and onion. Add the dressing and stir until mixed together. Add the cheese cubes. Cover and refrigerate for at least 2 hours. Add peanuts if using right before serving.
