Pecan, Rice and Feta Salad

1 7 oz. package wild pecan long grain rice

1 C. feta cheese crumbled

1/2 C. green pepper chopped

1/2 C. yellow pepper chopped

1/2 C. onion chopped

1/2 C. toasted pecans chopped

2 oz. pimento chopped

Dressing:

1/4 C. olive oil

2 T. tarragon white wine vinegar

freshly ground black pepper

Prepare rice according to package directions, using 1 t. salt. Cool.

Prepare dressing by combining in a small bowl and whisking together.

Add the rice, feta, peppers, onions and pimento to a bowl. Add the dressing and toss to blend. Chill for up to 24 hours.
