Vegetable Pasta Salad
1 bag vegetable rotini
1 cup frozen peas
1 tomato, chopped
2 carrots, sliced
4 green onions, sliced (white and green up to 1″ of top)
1 cucumber, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 stalk broccoli, chopped (flowerettes only)
1/2 head cauliflower, chopped
1/4 tsp. black pepper (or to taste)
1 tsp. basil leaves (dried)
1/2-1 cup fat free honey mustard dressing
Cook pasta according to package directions, adding peas for the last few minutes; drain.
Place in a large bowl and mix with remaining vegetables and spices.
Pour dressing on top, starting with 1/2 cup and adding more if necessary.
