Tomato Salad
4 tomatoes
2 cucumbers
1 small onion
1/2 C. green pepper
1/4 C. green olives sliced
1 t. parsley
1 garlic clove minced
1/2 t. salt
1/4 t. fresh ground pepper
1/4 C. fresh lemon juice
1/4 C. salad oil
Mix garlic, salt, pepper, lemon juice and oil together in a bowl.
Chop all vegetables into bite size pieces. Add to the dressing and toss to mix. Chill for 2 hours before serving.
Serves 4 – 6.
