Factory Creek Crab Chowder
2 pounds picked local blue crabs
1 cup diced celery
1 cup diced onion
1/2 cup minced garlic
6 large peeled potatoes
1 quart water
1 quart heavy cream
1 quart milk
3 tablespoons Old Bay Seasoning
1 cup fine sherry
1 stick butter
In a large pot, add butter, celery, onion, garlic, salt and pepper, water and potatoes.
Bring to boil, reduce for 15 minutes. Add milk and heavy cream, and keep reducing on low heat. Add Old Bay Seasoning.
Reduce to a thick consistency, then fold in blue crab meat at the last minute, add sherry, and serve.
