Salsa De Tomate Verde Cocida

3 C. water

2 1/2 t. salt

2 cloves garlic

4 serrano chilis

1 lb. tomates verdes (tomatillos), husks removed

1/2 C. loosely packed cilantro

1/4 C. chopped onion

In a saucepan, bring the water and 1 teaspoon salt to boil. Add the garlic, chilis, tomates verdes and simmer, uncovered, for 8-10 minutes. Drain, reserving 1/2 cup of the liquid.

Transfer the garlic, chilis, tomates verdes and reserved liquid to a blender. Add the cilantro and remaining salt and puree briefly. Transfer to a bowl.

Stir in the onion and let the sauce cool before serving.

Makes 8 servings.
