Baked Chicken Parmesan
5 Tbsp. melted unsalted butter
1 Tbsp. Dijon or dry mustard
3/4 cup dried bread crumbs
1/2 cup freshly grated Parmesan cheese
2 Tbsp. chopped fresh parsley
1 tsp. dried basil
2 cloves minced garlic
3 whole chicken breasts, bone in, split
Preheat the oven to 400° F. Lightly grease a 9″ x 15″ baking dish.
In a shallow bowl, combine the butter with the mustard.
In another shallow bowl, blend together the bread crumbs, cheese, parsley, garlic and basil.
Dip the chicken pieces first into the mustard mixture, and then coat with the bread crumb mixture. Place skin side up in the baking dish.
Bake, uncovered for 45 minutes.
