Baked Parmesan Chicken
2 pounds boneless, skinless chicken breasts
1/2 cup butter
1 cup bread crumbs
1/4 cup parsley, minced
1/2 cup grated parmesan cheese
1/8 tsp. salt
1/8 tsp. garlic powder
Paprika
Melt the butter in a 13 x 9 baking pan in 250° F. oven. Remove pan from oven and set oven at 350° F.
Mix the bread crumbs, parsley, parmesan cheese, salt and garlic powder in a bowl.
Lay the chicken pieces in the pan and then turn them over to coat with melted butter, then roll them in the crumb mixture. Arrange in a single layer in the pan.
Garnish with paprika and bake uncovered for 1 hour, basting twice with the pan juices.
Serves 6 – 8
