Hawaiian Pancakes

1-1/2 cup flour
1 tablespoon baking powder
2 eggs
1-1/2 cup milk
1 tablespoon oil
1/4 cup coconut, shredded

Pineapple Topping:
1/4 cup butter
1/2 cup brown sugar, firmly packed
8 ounce can pineapple tidbits, drained

Mix dry ingredients. Add wet ingredients. Stir in coconut. Cook in hot pan till top is bubbly, then flip to brown other side.

Melt butter and brown sugar in a small sauce pan. Add pineapple and about 1 tablespoon of pineapple juice.
