Corn Scallop
1 (17 oz.) can cream style corn
2 eggs beaten
1/2 cup crushed soda crackers
1/4 cup butter melted
1/4 cup evaporated milk
1/4 cup finely shredded carrot
1/4 cup green pepper chopped
3 tablespoon chopped celery
1 teaspoon chopped onion
6 drops Tabasco
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup shredded Cheddar cheese
paprika
Combine corn and all ingredients except cheese and paprika.
Mix thoroughly and put into a greased 8 x 8 x 2″ baking dish.
Top with cheese and sprinkle with paprika.
Bake 350° F. 30 minutes or until mixture is set and top is golden brown.
Serves about 8
