Crustless Zucchini Pie

1 large onion chopped

1/2 cup veg oil

1/2 cup grated parmesan cheese

4 beaten eggs

1 tablespoon parsley

3 cups grated zucchini

1 cup Bisquick

1 cup shredded cheddar cheese

Combine first 5 ingredients. Stir in zucchini, Bisquick and cheese

Pour into 2 greased 9 inch pie plates

Bake on 350º for 35 minutes or until golden brown.
