Mary Ellen, I love soft and crispy gingerbread 🙂 However I have a very soft spot for a soft one. I have a recipe that was my Nanny’s, I have actually blogged it. If your interested I will send it to you 🙂 Great post. Makes me look forward to the cooler weather!

Thanks Marion! you will love this cookie then because it is right in between. I have them in an air tight container and they softened up a little but not much. They are good though and easy to make.
