Lemon Pepper Broiled Chicken Breasts

4 each chicken breast halves without skin (7 oz each)
2 Tablespoons fresh lemon juice
1/2 teaspoon lemon zest, grated
2 Tablespoons extra virgin olive oil
1/2 teaspoon salt
1 teaspoon black pepper, coarsely cracked
1/2 teaspoon sugar
4 each lemon wedges

In medium bowl, combine lemon juice, lemon zest, olive oil, salt, pepper, and sugar.

Add chicken breasts and turn to coat. Marinate at room temp, turning once or twice, for 30 to 60 minutes.

Preheat broiler.

Set chicken, bone side up, about 6 inches from heat. Broil 10 minutes. Turn, baste with any marinade remaining in bowl, and broil 10 to 15 minutes longer, until chicken is white throughout, but still moist.

Serve with lemon wedges.

Yield: 4 servings.  (5 WW PPS) Diabetic exchanges:4 lean meat, 1 1/2 fat. Also, 196 calories, 8 g fat (1 g sat fat), 68 mg cholesterol, 2 g carb, trace fiber, 27 g protein, 344 mg sodium, 328 mg potassium.
