Crock-Pot Beef and Potatoes
2 lbs. lean ground beef
1 tsp. salt
1/2 tsp. ground black pepper
1/4 cup finely chopped onion
1 can condensed tomato soup
5 to 6 medium potatoes
1 cup light cream
In large skillet, brown ground beef. Pour off excess fat.
In small bowl mix together salt, pepper, onion, and undiluted soup.
Peel and slice the potatoes.
In crock-pot arrange alternate layers of potatoes and ground beef (with potatoes on bottom). Pour soup mixture over. Cover and cook on LOW 4 to 6 hours.
Turn to HIGH; pour cream over all; cover and cook an additional 15 to 20 minutes.
Serves 6
