Crockpot Mexican Meatloaf

2 lbs. ground beef
2/3 cup taco sauce
4 Tblsp. packaged taco mix (or more)
2 cups coarsely crushed corn chips or Doritos, more if needed
2 large eggs, lightly beaten
1 cup grated Monterey Jack or cheddar cheese

In a large bowl, mix all ingredients. Shape into a loaf and place in a Crock-pot.

Cover and cook on low 8 to 10 hours or on high 3-1/2 to 5 hours or until meat is no longer pink inside.
