      I didn’t use steaks, it was a cut of beef called a flat iron steak. It was like a think pot roast but no gristle. It has connective tissue but it just melts as it cooks. Makes a wonderful broth for dipping the sandwich in. This cut was featured all summer for good on the grill.

      This was the first time in months I made chips. I don’t buy them either. This sandwich just seemed to call out for them however.
